Lunch Salads • Fajita Chicken Salad Fresh greens with mixed cheeses, tomatoes, pico de gallo, guacamole and sour cream. Completed tableside with sizzling onions, red and green bell peppers and fajita chicken. Garnished with two flour tortillas and served with a side of our zesty avocado chipotle dressing. • Taco Salad Shredded lettuce, chile con carne, taco beef, mixed cheeses, pico de gallo and tortilla strips. Topped with guacamole and sour cream. Served with our salsa on the side. • Fiesta Salad Mixed greens, red and green bell peppers, onions, blended Jack & Cheddar cheeses, black beans, tomatoes and tortilla strips with pico de gallo and guacamole. Topped with fresh chilled chicken breast and served with homemade Jalapeño Ranch dressing. Lunch Fajitas • Lunch portion served with flour tortillas, refried beans, Mexican rice, sour cream, pico de gallo and choice of guacamole or cheese. Favorites • Quesadillas Traditional grilled flour tortillas stuffed with shredded Jack and Cheddar cheeses, fresh poblano peppers, caramelized onions and your choice of fajita chicken or fajita beef. • Beef Burrito Taco beef, mixed cheeses and pico de gallo wrapped in a flour tortilla and topped with chile con carne and mixed cheeses. Served with Mexican rice and refried beans. • Chicken Burrito Seasoned shredded chicken, Monterey Jack cheese and green chilies wrapped in a flour tortilla and topped with Ranchero sauce and Jack cheese. Served with Mexican rice and refried beans. • Chimichanga Your choice of fajita chicken or ground beef, onions, peppers and Monterey Jack cheese wrapped in a flour tortilla and fried to a golden brown. Topped with chile con queso and sour cream sauce. Served with Charro beans and Mexican rice. • Brisket Tacos Slow smoked brisket on our homemade flour tortillas. Served with sliced avocado, pico de gallo, Mexican rice and Charro beans. Traditional Lunch Specials Served every day until 4:00 p.m. Each Mexican Inn Lunch comes with plenty of homemade chips, spicy salsa and stone-ground corn tortillas. • #1 One cheese enchilada and one tamale, both with chile con carne, Mexican rice and refried beans. • #2 Two cheese enchiladas with chile con carne, Mexican rice and refried beans. • #3 One cheese enchilada with chile con carne, one beef chalupa, Mexican rice and refried beans. • #4 One cheese enchilada with chile con carne, one crispy beef taco, Mexican rice and refried beans. • #5 Two crispy beef tacos, Mexican rice and refried beans. • #6 Arroz con Pollo (Chicken & Rice)...an old Mexican Inn favorite, topped with chile con queso and served with a bean chalupa. • #7 Tortilla Soup and Salad...a smaller version of our delicious soup and a fresh side salad topped with homemade Jalapeño Ranch dressing. |
